Embrace the Ordinary vol. 21 + Meal Plan

So, I’m sitting here making a meal plan and grocery list, thinking about needing/wanting to blog here, also, and it struck me that I can turn my meal plan into a post. How’s *that* for embracing my ordinary? Besides, Nell has been trying to get me to link up with her for weeks, now, so I can kill 3 birds with 1 blog post.
I have mentioned before how I use Plan to Eat for my meal planning. (<<Affiliate link.) It’s a great tool for organizing and storing recipes from all over the web, creating and saving menus, and creating a shopping list. It is so handy. Well, I’m sitting here working on a menu, using Plan to Eat, and decided to screen-shot this week’s plan to share. I’ll even link the recipes!
- Sunday is empty, because I plan for us to eat light, having some local summer sausage I just bought, cheese, crackers, carrots, and hummus.
- Monday is enchiladas, with a seasoning packet I have in the pantry, rice, guacamole, and whatever fixings I decide.
- Tuesday is Chicken Wild Rice Soup
- Wednesday is Korean Beef and Rice (a favorite here!) I serve it with rice, sauteed spinach, grated carrots, fried eggs.
- Thursday will probably be leftovers, or salad
- Friday is Crunchy Black Bean Tacos–meatless and Mexican for the feast of Our Lady of Guadalupe. Looking for another meatless meal idea? Check the one I just posted.
- Saturday will be pizza, probably.
There ya go. Any easy faves to share with me? I feel like I’m in a rut.
You’re awesome. I still haven’t gotten on the meal plan bandwagon. It really doesn’t mesh with my personality, but I know it would be so beneficial to our finances. Although, I do usually use up and cook all our pantry and fridge. Maybe in the new year? Either way, your week sounds delicious!
Sometimes, I hate meal planning…but it is so much easier in the long run when I have a plan in mind and the ingredients to go with. I’m slowly trying to simplify this even more, though, by having staples in the pantry and fridge that can make a quick and tasty meal any time.
